I love pancakes. I like experimenting and making interesting shapes for my kid. I bought special bottles so I could make some bunny pancakes, and they were a complete fail (thanks, Pinterest). Once upon a time, I made some monkey flapjacks that turned out slightly better.
But it’s almost St. Patrick’s Day, and here’s a great excuse to make pancakes! Green pancakes, with marshmallows, to be exact.
All you need is Bisquick, Lucky Charms, milk, vanilla and eggs. Whip up the batter according to the box. That’s where the milk, vanilla and eggs come in. Add some green food coloring (as much as you want!) for some zing. Then add about 1/2 cup of Lucky Charms marshmallows. Stir it all together and pour onto your griddle. Cook each pancake until bubbles begin to form, then flip over.
Top with your favorite toppings: butter, peanut butter, Trader Joe’s cookie butter, syrup…..Hey, I read the other day that if you cut all of the pancakes into a grid first, before pouring the syrup, it allows the sticky nectar to reach into every nook and cranny, allowing syrup in each bite. Yum.
