A highly anticipated new restaurant will open its doors in Claremore next week, bringing the heart of Louisiana soul food to Green Country. Gibby C’s South in Your Mouth Scratch Kitchen will open Wednesday, October 18, in Claremore’s historic Lilac District, offering flavorful menu items such as Gumbo, Firecracker Shrimp, and Catfish Opelousas.
Owner Carla Gibson combines her love of family, fellowship and Cajun cuisine to create a unique dining experience centered on authentic southern comfort creole flavors with an Oklahoma twist. Gibson’s love of cuisine was born in the heart of the French Quarter, where she developed many of the famous flavors loved by her customers.
With more than 25 years in supply chain procurement, Gibby C’s developed from Gibson’s desire to provide quality and delicious meals for her family while juggling a busy career.
“I started selling freezer meals in the height of the pandemic,” said Gibson. “My small business operation quickly boomed, and we opened our first storefront location in Collinsville.”
As Gibby C’s popularity grew, Gibson began looking for expansion opportunities and quickly fell in love with Claremore’s historic charm and friendly atmosphere.
“We had a large customer base from Claremore,” said Gibson. “After connecting with the business community and learning about the support services offered to small business owners, it was easy to choose where to expand our restaurant.”
Gibby C’s will offer a wide variety of classic creole, cajun and southern comfort food dishes. Sundays include a family style menu. Additionally, the restaurant will feature a party room capable of seating up to 40 guests. Menu items include:
- Voodoo Chicken – Cajun fried chicken breast topped with our crab and shrimp mornay
- Seafood Platters – With fish, shrimp, frog legs and alligator
- Seafood PoBoys
- Blackened Ribeye – Seasoned and chagrined to perfection
- Shrimp n Grits
“Our goal is to treat every customer who walks through the door like a member of our family,” said Gibson. “Amazing moments happen when people gather around a table to enjoy a meal, and I am excited to play a part in fostering incredible memories for community members for years to come. Gibby C’s will be located at 520 W Will Rogers Boulevard and be open on Tuesday through Saturday, 11 a.m. to 9 p.m. and Sunday 10:30 a.m. to 7 p.m. You can learn more about the restaurant and its menu options here.
