Yum: Honey-Sweetened Strawberry Lemonade

lemonWe canceled our cable about a year ago.

That being said, we watch a lot of Netflix. I like to watch shows; my husband likes to watch movies. The majority of the time, we compromise and watch documentaries. That’s what started the spiral into “clean eating.”

If you know me at all, you’re aware that I don’t eat veggies, with the exception of green beans and corn, which are apparently not actually vegetables. But then we watched a documentary about juicing. And we decided to break out the dusty old juicer and drink nothing but fruit and VEGETABLE juice for a solid week.

It seemed like a great idea until about two days in. Oh, and we also started the “detox” on Super Bowl Sunday. So instead of eating wings and drinking beer, we were drinking celery juice or something. I learned how to down my juice without really tasting it, and we did it. And you know what? My palette actually changed.

Now, I’m eating all kinds of vegetables. I don’t like them all, but I like more than I thought I would. We’ve also been making a solid effort to “eat clean.” Our rule is, if it has something in it that you can’t pronounce, don’t eat it. Of course, I fail. A lot. But I do try. And that’s why I was excited to see this recipe by my favorite dessert blogger for Honey-Sweetened Strawberry Lemonade, just in time for summer. There are only four ingredients; it doesn’t get much cleaner (and easier) than that.

  • 1 and 1/2 pounds strawberries, washed and halved
  • 6 cups water
  • juice of 4 Sunkist Meyer Lemons*
  • 1/2 cup honey (or to taste)

Add strawberries, lemons, honey and 2 cups water to a blender and blend together for two minutes or till there are no chunks. Pour it into a pitcher and add the rest of the water. *Sally says that Meyer lemons are sweeter, so if you use another kind of lemon, you might want to add more honey.

I’ve also been having a tough time finding clean juice for my kiddo; he loves lemonade, so this might be just the ticket. (Also, add rum to make it a bit more “adult.”)
