Motivation Monday: Apple Pie Overnight Oats

appleI enjoy regular oatmeal, but sometimes a change from a hot bowl is nice…Overnight oats are a TASTY option. Here’s how it works: you combine dry oats, a liquid, and whatever other fun add-ins you want, refrigerate it over night (or up to 4-5 days) and the next morning you have a cold bowl of soft oats that have absorbed all the delicious flavors. Great, right? Well, it’s even better when they’re apple pie flavored and don’t need any extra sugar to be scrumptious. #winning

1⅓ cup old-fashioned rolled oats
½ tsp cinnamon
¼ tsp ground ginger
¼ tsp ground cloves
½ cup chopped walnuts
¼ cup dried currants
2 cups milk
1⅓ cup unsweetened applesauce

Gather four 12oz. mason jars or any other type of small resealable container. To each container add the following ingredients in this order: ⅓ cup oats, ⅛ tsp cinnamon, 1/16 tsp ginger*, 1/16 tsp cloves, 2 Tbsp walnuts, 1 Tbsp currants, ½ cup milk, and ⅓ cup applesauce.
Place the lids on the containers and refrigerate at least over night and up to 4-5 days.
When ready to eat, simply dig in with a spoon, or empty the contents of the jar or container into a bowl and enjoy.

*For the 1/16th tsp measures, simply estimate half of a ⅛ tsp measuring spoon.
